The cable gland is used to route cables through housings, while maintaining the IP68 tightness standard. Some call it a gland or sleeve.
You can use this method to lead the DS18B20 cable out of the housing (e.g. NAMa. This gland is PG-7 in size, designed for cables from 3.5mm to 6mm (DS18B20 cables have a diameter of 3.5mm).
The gland is gray, in a shade similar to the NAM housing.
